Scott has become a Certified ServSafe Instructor and Registered ServSafe Proctor for the National Restaurant Association. Please take a moment to look around the walls and see some of Herkimer's history including this famous old diner.

His first step was to completely gut the kitchen and start all over. Scott immediately went to work doing what he does best and the results are evident. Finally, when the Empire Diner became available for purchase in 2006, we knew it was calling our name. Every time we drove through Herkimer, the Empire Diner was under new management/new ownership, but the diner always stayed in its sad state of disrepair. We quietly determined that we were never going to do another restaurant. In 2003, we decided to relocate to upstate New York, opting for a quieter and simpler lifestyle.

We owned and operated these diners for 17 years while raising our four children and becoming very active community members. This restaurant grew into a successful chain of diners. In 1991, Scott and Kim bought our first restaurant in California. Scott attended Culinary Arts School in Quincy MA and at the age of 16 became the weekend manager/cook of a little diner in North Quincy, MA (which is still open today).

An impressive body of work.It all started with an Easy Bake Oven Scott received for Christmas in 1970, despite the objections of his dad! He started "helping" in his aunt's restaurant which fueled his love of the food business and set the direction for the next 39 years of his life. And that’s to say nothing of his work with directors like John Huston or Martin Scorsese. But there are also noteworthy appearances in several David Lynch projects: from Wild at Heart (1990), Twin Peaks: Fear Walk With Me (1992), to the ailing brother in The Straight Story (1999), to his appearance in the wilfully bizarre short film The Cowboy and the Frenchman (1988). My favourite Stanton performance is his role as the lead in Wim Wenders’ 1984 film Paris, Texas. He is unforgettable as the grumbling engineer in Ridley Scott’s Alien (1979), “right”? And it didn’t take long for this masterful character actor to find his way to the forefront. In the early days he haunted the margins of classic films like Francis Ford Coppola’s The Godfather: Part II (1974) where we glimpse him playing pool, or sitting behind Frankie Pentangeli during an FBI hearing. Harry Dean Stanton has been a prominent presence in American cinema for sixty years.
